The Times Collaborative is a coworking space in downtown Longmont. One of the many ways this space is unique is that it features a commercial kitchen, providing a space for new chefs and small businesses to practice their craft. For Longmont Restaurant Week, two of these businesses are offering chef experiences. Lunches will be prepared by Tiger & Wife for $18.71 and is available between 11am-1pm. Vegetarian Bahn Mi fresh toasted bolio roll stuffed with smoked tofu, brown butter aioli, pickled carrots & daikon, jalapeno, cucumber, sweet herbs and fried shallots and garlic
Bun Cha fresh rice noodle books layered with local lettuces, pickled carrot & daikon, fresh cucumber and jalapeno slices topped with 5 spice lemongrass grilled chicken and a 6 minute soft egg. Finished with fried shallots & garlic and drizzled with nouc cham (sweet & spicy chili sauce)
Longmont Restaurant Week is produced by the Longmont Area Chamber of Commerce. The event began in 2018. Since then, more than 60 local restaurants and craft beverage businesses have participated in the event, offering special menus for only the 10 days of the event. The menus are available for $18.71 to honor the year Longmont was founded. In 2019, a second price point of $28.71 was introduced to make the event more inclusive to a range of dining options in Longmont.
